The "fizz" is a category of cocktails which features a premium gin alongside citrus flavors, sugar and sparkling water. Some might say it resembles a "sour" with soda; and they would be right. In fact - both drinks commonly contain egg whites too.
Gin Fizz first appeared in the 1876 edition of “The Bar-tenders Guide” by Jerry Thomas. Essentially, it is a uniquely frothy, tickle-inducing-bubbly, high-protein step-child to the Tom Collins cocktail The Tom Collins cocktail combines gin, lemon, sugar and soda. Just no egg.
Fizzes were extremely popular in the early 20th century. The most famous Gin Fizz variation is the Ramos Gin Fizz, which is uniquely characterized by its inclusion of heavy cream and orange flower water. It was invented in New Orleans, and it is still a very popular cocktail on Bourbon Street. Some would say it is a more "refined" version of the original one.
If you prefer a thicker drink, you can always dry-shake the cocktail ingredients first (shake it without ice). This helps all of the ingredients and the egg whites emulsify better. Finally, shake again after adding the ice until nice and cold. Finally, strain the cocktail into a tall collins type glass for a layered presentation.
